A Yule log as a work of art to be shared
With ‘Sèvres’, Pastry Chef Baptiste Vial reinvents the Yule log as an invitation to share: six individual portions arranged in a ring. This gluten-free creation combines the sweetness of lime blossom honey and La Chalotterie fromage blanc with the freshness of citrus fruits – mandarin, clementine, grapefruit, lemon and bergamot. Beneath a white chocolate glaze, an almond-vanilla sponge, a honey-almond crisp, citrus confit and a bergamot cream come together to create a delicate and vibrant tasting experience, punctuated with pollen, candied citrus and a few tuiles.
